I’ve just got back from a few blissful days in the South of France. We managed to find a few places that did fresh juices and smoothies but I’m pretty sure they didn’t actually contain that much fruit and veg. Much cheaper for them to include lots of apple and orange concentrate but not so good for us! They were still really yummy and hit the spot on those boiling hot days. We also ate lots of pasta, pizza and gelato! Viva la France!
This is my favourite green smoothie at the moment and it’s perfect for breakfast or often I have it with a salad at lunch time. Normally mangoes do not taste good in London. They stay pretty green and never quite ripen properly. But with the amazing weather we have been having the mangoes are so delicious and sweet and juicy! Every time I go back to Australia in summertime I gorge myself on those wonderful mangoes, so this gives me a little taste of home.
This green smoothie is super sweet and so delicious. The mango and banana makes it creamy and wonderful and you can’t taste the spinach at all. I had this for breakfast this morning and it was such a great way to start the day. It gave me loads of energy and kept me full until lunch time. Sometimes if I want a smoothie more as a snack and therefore not so filling I’ll leave out the oats but for breakfast this is perfect. Such a great way to get some greens into you!
- 2 cups coconut water
- 2 large handfuls spinach, washed
- 1 handful of fresh mint sprigs
- 2 bananas
- 1 large ripe mango
- 4 tablespoons oats
- Add coconut water to a blender with the mint and spinach and blend until everything is combined
- Add banana, mango and oats and blend until smooth
- Pour into glass and serve cold
